This plant is known by several names. Here it is referred to as the Spanish Marjoram but can also be found under the title of mastic thyme or sweet thyme among others. It is a small, evergreen shrub that usually reaches only a foot in height and is a mere 2 feet wide. In the summer months, puffy white flowers appear among its greenery.

While the leaves are commonly used both fresh and dried for seasoning in many different culinary delights, the oil the plant contains is also valuable. It can be used to flavor a number of different foods as well but is prized for its medicinal uses.
